Nian Gao
(Chinese New Year Cake)
Ingredients
2 tablespoons butter, softened
3 eggs
2 1/2 cups milk
1 tablespoon baking powder
2 tablespoon olive oil
1 cup brown sugar
1 (17.6 ounce) bag glutinous rice flour
2/3 of an 18 ounce can red bean paste
Preheat oven to 350 degrees. Combine softened butter, olive oil and eggs and beat until smooth. Add brown sugar and mix well. Add milk and mix until well combined.
In a separate bowl, combine the rice flour and baking powder evenly. Combine egg mixture and flour mixture and stir until well combined. Pour mixture into greased 13x9x2 pan.
Using a knife or your fingers, spread the red bean paste on top of the flour mixture half an inch thick in any pattern you like.
Bake for 50-55 minutes at 350 degrees. Cake is done when top layer is slightly golden brown. Turn off the heat and allow the cake to stand for 5 minutes in the oven. Remove from the oven and allow the cake to cool for at least 15 minutes before cutting into small squares.
