Zheng Ji Dan Geng
(Steamed Eggs)
Ingredients:
2 eggs
Dash of salt
Half green onion, chopped
1/2 cup water
2 drops of soy sauce
2 drops of sesame oil
Beat two eggs in a bowl and add water. Add salt and soy sauce and mix until combined. Pour into a flat bottomed ceramic type bowl.
Heat half an inch of water in a large skillet over medium high heat. Place a metal trivet in the center of the skillet. When the water reaches a boil, place the bowl of egg mixture in the skillet on top of the trivet. Steam for ten minutes over medium high heat. Eggs are done when all liquid is absorbed and eggs are hard cooked. Make sure to use a spoon to check the underside.
Add the green onions and sesame oil to the surface of the eggs.
