Chinese New Year Whole Fish with Sweet and Sour Vegetables

1. Score the fish flesh, cutting three to four diagonal slits through to the bone on both sides.
2. Season with salt, rubbing the salt into the cuts
3. Cook under a preheated grill four minutes on each side.  Alternatively, barbeque it.
4. Meanwhile, heat a wok; add a little oil, ginger, chili and vegetables tossing well, over high heat for two to three minutes.
5. Add soy and oyster sauces, sugar, vinegar and sesame oil and bring to a boil.
6. In a bowl, mix corn flour to a smooth paste with cold water.  Add to the pan and simmer until sauce thickens.
7. Place fish on a serving platter, and spoon sauce and vegetables over the top.
