Caramelized Plantains

4 plantains, peeled
¼ cup cooking oil
2 cups sugar
½ tablespoon vinegar

1. Cut peeled plantains in thick wedges or slices.
2. Fry plantains in hot cooking oil for two minutes, drain, and set apart.
3. Mix sugar and vinegar and cook on stovetop to hard ball stage.
4. Dip plantains in cooked syrup or pour syrup over them.
5. Let cool and serve.
